Hey! I've noticed this was getting alot of views and no replies, so i'm guessing lots of people were curious about this but not so many had any tips. Well, i've found out some stuff thats looking pretty useful.
The Introduction to Maya Muscle tutorial includes a smooth skinning deformer as well as relax (wrinkling) and jiggle deformers, all can be applied to smooth bound skins on joint systems.
The smoothing deformer doesn't make an anti-aliased render, its sort of like hitting the 3 key, but itll show up in any render, not just Mental Ray. It can also have its influence painted on the mesh, so you can keep your hard edges without necessarily having to ad more geometry.
I highly recommend this tutorial.

If you want the smoothed look that '3' and mental ray gives you, you can select your polygon object and go to Polygons -> Mesh -> Smooth. A Divisions level of 2 will give you the same result as hitting '3'. Are you using a Polygon object, Sub-D or NURBS?
I was meaning a method of smoothing without adding geometry. I came to the muscle smooth deformer and the average vertices commands. I'm still looking into anti-aliased rendering.
My ultimate goal is to make something like a mental ray render but useable in a game.
