Does anyone know if there is a way in Maya to render out subdivision surfaces with the Vector Renderer without having it convert your object to a polygonal mesh? I'm trying to show some of my modeling on a demo reel, and I'd like to show the wire frame as is. Thanks.

Vector Render tends to tesselate surfaces at render time, so I doubt you can have it show your exact wireframe.
You should try using the Hardware Buffer Render instead. It's under Window, Rendering Editors. Go to the Render menu in it and then to Attributes to bring up the Hardware Render Globals and set the Draw Style to Wireframe.
You can also try using a wireframe shader like this one
