maya does not limit the amount of space you can use. I think your problem is the camera's clipping planes, so whats happening is when you move the object it disappears. To fix it go to the attributes of the camera and increase the far clip range to a bigger number. Just keep in mind that for rendering you can have a clipping distance which is too big or it will produce problem in the render.

the grid doesn't move. You can have objects outside the grid, its really doesn't matter. If you want to make the grid bigger go to display->grid options box and then just make it bigger.

Hi ngs64,
Alrighty first things first.
-Go to Window->Outliner
-Select the perpective camera or the camera you are looking through "if you created one"
in the outliner
- Hit CTRL+A to open your attribute editor
-In the attributes the is a setting for "far clip plane" and "near clip plane"
-Set the "far clip plane" to something like "2000" and the "near clip plane" to something like ".01"
-Increase the far clip as needed if that is enough. Don't throw a crazy number in though or it can effect your render.
-Now to change the grid
-Go to "Display->Grid (option box)"
-Change the units to a higher number. The default is 12 in each direction. You can also change it to display the grid a certain number of units.

thx so much.. that was very helpful!.. one moree thing.. right now the center is at the center.. is there a way to move it to the left for viewing only so i have more space while I add things to the right of center?

The center will always be the center. You have this option though. Select everything in your scene and hit CTRL+G to group them. The groups origin is now at the center. You can move the group wherever you want now while the abject in the group keep the same origin to the groups center.
